I read something about April/May being the best time to remove old weeds and plants because the dirt is softer from the months and months of downpours we’ve been experiencing. So I started my natural weed control – elbow grease.

Chocolate Macaroon Pie

Grease a Pan. The photo shows a circular pan – this is the best I got.

Buy or make plain macaroons.

1 bag of dark chocolate chips and put them in a bowl.

Crush the macaroons into crumbs and line the greased pan with them to create the crust. I washed my hands really well and used my knuckles to really pack the crumbs into the dish.

Boil 16 oz, or 1 can of coconut milk for about one minute – stirring. Then pour the coconut milk into the bowl with the dark chocolate chips and whisk the milk in so the chips are all melty.

Pour the chocolate chip mixture into your crust. Cover and put in the refrigerator for at least an hour. I left mine in overnight and it turned out perfect.

Jicama and Red Cabbage

Slice 1/2 the Red Cabbage thinly : Grate one medium Jicama

Grate 3 carrots

Chop 2 tablespoons of white onion

At this point – store in the refrigerator with water to preserve if cooking in advance, continue forward 1.5 hours ahead of serving.

Add 1/4 cup of gluten free/kosher Mayonnaise. 1 teaspoon of lime juice.

1 Teaspoon of Maple Syrup

1 Teaspoon of Apple Cider Vinegar : Salt & Pepper to taste

Cover & refrigerate for at least one hour. (This makes a difference!) Serve Cold

Braised Lamb Shanks With Apricots & Warm Spices

Yeay! TGIF and the main course! This whole tribute of blogging week occurred to me half way through this recipe. So I don’t have pictures for the first quarter. It doesn’t deter from how great it tasted!

I will show pictures of what the original recipe calls for – but note to reader – I doubled the recipe because it is made for 8 people and I have 20 coming over…..

  • 1 Pound of Lamb Shanks per person. (I have 20 so I doubled the original Recipe)
  • 6 Tablespoons of Olive Oil
  • 3 Large Onions Diced
  • 2 Heads of Garlic, peeled and minced
  • 2 Cinnamon sticks
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 Teaspoon ground ginger
  • 4 Teaspoons black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground cardamom
  • 2 Tablespoons of dried Thyme
  • 4 Cups of Chicken Broth
  • 1 & 1/2 cups unsulphured dried apricots
  • 1 bunch of Cilantro, leaves roughly chopped
  • 1 Lemon silced thinly as garnish.
  1. Preheat the over to 300 degrees, season the lamb shanks all over with salt and pepper.
  1. Heat hald of the oil over hiugh heat in large saute pan, add the shanks and sear on all sides. (If your pan is too small, do one or two at a time)
  2. Remove from the pot and set aside.
  3. Reduce heat to medium and add the remaining oil and the onions.
  4. Saute the onions until softened.
  5. add the garlic and saute for 1-2 minutes, until grafrant.
  6. Stir in Cinnamon sticks, nutmeg cloves, ginger, pepper, cumin, cardamom  thyme.
  7. Move the shanks into a roasting pan or dutch oven. Pout the onion mixture over the shanks and add the apricots.
  8. Cover and roast for 3 hours.
  9. If serving right away, serve over rice.
  10. If cooking ahead of time for big Passover mea! Let the shanks cool to room temperature and put them into the fridge. To reheat – cover them and put them over a medium temp. stove until shanks are heated through.
